When you think of the Caribbean it usually conjures up a vision of tropical sunsets, lazy laid-back days, rum punches, fresh exotic fruit, warm temperature and hot spicy fresh food. Now when you think of hot, spicy food you probably think it tastes the same wherever you go, however, this couldn't be further from the truth. You see in the Caribbean itself, while there is a common cultural identity, each island is so different from the others. By travelling from one country to another you can experience a totally different taste.

The cultural differences are a direct result of the opening up of the islands by settlers at various times in their history and the blending of African, India and the Caribs with French, English, Spanish, Dutch and Portuguese culture. This more than anything else gives Caribbean cooking its own style and taste.
